SAEDNEWS: Cutlets are a beloved dish prepared in many different ways around the world. However, one of the most delicious versions is the Turkish-style preparation, known as Katmer Dağ Cutlets.
According to Saednews, Tekirdağ-style Turkish meat patties are incredibly delicious and flavorful, and they originate from the Turkish city of Tekirdağ. These tasty meat patties are traditionally served with a special sauce and are relatively easy to prepare using simple ingredients.
800 g ground beef
1 medium onion
¼ cup water
3 tablespoons dry breadcrumbs
1 tablespoon fresh lemon juice
1 teaspoon baking soda
2 teaspoons ground cumin
2 teaspoons black pepper
1 teaspoon paprika
1½ teaspoons salt
1 teaspoon hot pepper sauce
2 large tomatoes
1 teaspoon black pepper
1 teaspoon paprika

First, grind the beef if you are not using pre-ground meat.
Place the ground beef in a large bowl and add the paprika, baking soda, cumin, black pepper, and salt. Add the lemon juice and knead the mixture thoroughly for about 5 minutes.
Cover the meat mixture with plastic wrap and refrigerate it for 4 hours. This resting time allows the mixture to become firm and well combined.
After the first resting period, peel the onion and garlic and grate them finely. Squeeze the grated onion firmly to remove excess liquid.
Add the onion, garlic, dry breadcrumbs, and water to the meat mixture. Knead everything together by hand for another 3–4 minutes.
Take portions of the mixture about the size of a tangerine and shape them into oval or round patties.
Cover the shaped patties again with plastic wrap and refrigerate for another 4 hours.
Once the patties have finished resting, place a frying pan over low heat and add a little olive oil.
When the oil is hot, arrange the patties in the pan. Increase the heat slightly and turn the patties occasionally so that all sides are lightly browned and seared.

Then cover the pan and reduce the heat to medium-low. Allow the patties to cook thoroughly.
During cooking, remove the lid several times and turn the patties to ensure they cook evenly.
Finely grate the tomatoes and place them in a separate pan.
Add the hot pepper sauce, paprika, and black pepper. Stir well until all the ingredients are evenly combined.
Cook the sauce over medium heat for a few minutes until it thickens slightly.
Arrange the cooked Tekirdağ-style meat patties on a serving plate and serve them alongside the warm spicy tomato sauce.
