According to Saednews, If you enjoy having a different kind of breakfast from time to time, Haleem is definitely worth trying. This traditional Persian breakfast is a thick, creamy dish made mainly with wheat and meat. Turkey, especially breast or thigh meat, works wonderfully for a lighter yet nutritious version.
500 g peeled wheat
300 g turkey meat, preferably thigh or breast
About 1.5 liters of water, for cooking the wheat and turkey
Ghee or butter, as needed for serving
Sugar and cinnamon, to taste
1 teaspoon salt
1 medium onion
½ teaspoon turmeric

Soak the peeled wheat in water overnight, or for at least 5–6 hours, until it softens. Soaking helps shorten the cooking time.
Place the turkey, chopped onion, turmeric, and some water in a pot. Cook until the meat becomes completely tender, which usually takes about 1 hour.
Remove the cooked turkey from the pot and shred it finely with a fork, or blend it into a smooth texture.
Put the soaked wheat in a large pot with about 1 liter of water. Cook it over low heat, stirring every few minutes to prevent it from sticking to the bottom.
If the water evaporates before the wheat becomes soft, add more boiling water. Continue cooking until the wheat is completely broken down and develops a thick, smooth, porridge-like consistency. This can take approximately 2–3 hours.
Mix the cooked wheat with the shredded turkey and return the mixture to low heat. Add the salt and stir frequently until the haleem becomes thick, smooth, and creamy. This should take around 20–30 minutes.
Transfer the haleem to serving bowls and top with melted butter or ghee, cinnamon, and sugar.
For a savory version, you can skip the sugar and instead season it with salt and pepper.

Stir the haleem frequently during the final stages to keep it from sticking or burning.
If the haleem becomes too thick, gradually add a little boiling water.
For extra flavor, add a small amount of ginger or cardamom while cooking the turkey.
