Full-fat milk: 3 liters
Iranian broken rice: 1 cup
White sugar: 1½ cups
Rosewater: ½ cup
Traditional animal butter (ghee): 50 grams
Ground cardamom: 1 teaspoon
Cinnamon: As needed
Sliced almonds: As needed
Instructions for Making Mashhadi Digche

First, clean the broken rice thoroughly. Wash it several times with cold water until the water becomes clear. Then soak the rice in water for 2 to 3 hours. This helps the rice cook better and gives the Digche a softer texture. Digche has a similar preparation style to the famous Persian dessert Sholeh Zard.
Place the soaked rice in a suitable pot with two cups of water. Cook it over low heat and allow the rice to slowly soften while the water evaporates. The rice should become completely tender and cooked. Stir occasionally to prevent it from sticking to the bottom of the pot.
After the water has evaporated and the rice has become soft and slightly mashed, add the milk.
If you are using green cardamom pods, lightly crush them and add them with the milk. If you have cardamom powder, add it at this stage.
Keep the heat low and stir continuously until the milk is absorbed into the rice and the Digche mixture becomes thick and creamy.

When the milk and rice mixture has thickened, add the sugar and butter. Continue stirring until the sugar completely dissolves and the texture becomes similar to a thick Persian pudding.
Make sure the butter melts completely and blends into the mixture. Allow it to cook for another 15 minutes until the dessert reaches the desired consistency.
During the final five minutes of cooking, add rosewater and brewed saffron to the Digche. Stir well so the fragrance of the rosewater and the beautiful color of the saffron spread throughout the dessert.
To check the consistency, take a small amount with a spoon. If it does not easily fall from the spoon and has a thick, sticky texture, it is ready.
Once the Digche reaches the correct thickness, turn off the heat. Cover the pot with a lid wrapped in a kitchen towel and allow it to rest for about 30 minutes.
This resting process helps the flavors combine and gives the dessert a smoother and softer texture.
Pour the Digche into individual serving bowls or a large serving dish. Let it cool slightly.
Decorate it with cinnamon powder, sliced almonds, and sliced pistachios. Mashhadi Digche can be served either warm or chilled.
How to Make Mashhadi Digche in the Oven
Rice: 1 cup

Brewed saffron: ½ cup

Oven Method Preparation
First, soak the rice for 2 hours. Then place it in a pot with four cups of water and cook until completely soft.
Add 1 liter of milk to the cooked rice and mix well. Once the ingredients are combined, add the remaining milk.
Next, add the sugar and stir well. Add brewed saffron, cardamom, and rosewater. Then add the butter and cream. Stir regularly to prevent the mixture from sticking to the bottom.
When the Mashhadi Digche reaches the proper thickness, grease an oven-safe mold and pour the mixture into it.
Cover the mold with aluminum foil and make a few small holes on the surface. Place it in a preheated oven at 150°C (302°F) for about 45 minutes.
After baking, transfer the dessert to a suitable serving dish and enjoy the rich, traditional flavor of Mashhadi Digche.
