According to Saednews, This traditional Iranian sharbat made with basil seeds (tokhm-e sharbati) and balangu seeds (khoshkhar) is one of the most popular cooling drinks during hot seasons. It is widely consumed to relieve thirst, cool the body, and provide a refreshing natural boost. Beyond its pleasant taste, this drink is also valued for its nutritional and health benefits and is very easy to prepare at home.


Ingredients (Serves 4–6 people)

  • Dried balangu seeds (khoshkhar): 1/2 cup (about 6 tablespoons)

  • Basil seeds (tokhm-e sharbati): 4 tablespoons

  • Sugar (or honey): 1 cup (about 8 tablespoons)

  • Water: 6 cups

  • Rose water: 1/2 cup (optional)

  • Saffron infusion: 1 tablespoon (optional, for color and aroma)


Preparation Method

1. Washing the balangu seeds

Place the balangu seeds in a large bowl and rinse them several times with cold water to remove any dirt or impurities. Then drain them using a strainer.

2. Soaking the basil seeds

Wash the basil seeds separately and soak them in cold water for about 20 minutes until they swell and form a gel-like texture.

3. Preparing the sweet syrup

Pour water into a pot and heat it over low flame. Gradually add sugar while stirring until it is fully dissolved. Then add rose water and mix well.

4. Mixing the ingredients

Add the cleaned balangu seeds and saffron infusion to the syrup. Stir for a few minutes, then remove the pot from heat and allow it to cool completely.

5. Adding basil seeds

Once the mixture has cooled, add the swollen basil seeds and mix thoroughly.

6. Serving

Pour 2–3 tablespoons of the concentrate into a glass and dilute it with cold water or ice. Serve chilled.

  • Stir the drink regularly to prevent the seeds from settling at the bottom.

  • Sugar can be replaced with honey or rock candy for a different flavor.
