According to Saednews, Pan kebab (kebab tabei) is a popular and widely loved homemade Iranian dish. Unlike koobideh kebab, it does not require a grill or charcoal, making it a convenient option for serving with rice at gatherings. It is both delicious and easy to prepare, and with the right ingredients, you can make this simple dish at home. One of the key secrets to a tasty pan kebab is using a special spice blend. Below is how to prepare it.
Ingredient | Amount |
|---|---|
Turmeric powder | 2 tablespoons |
Ground green cumin | 1 tablespoon |
Mustard powder | 1 teaspoon |
Onion powder | 2 tablespoons |
Garlic powder | 1.5 tablespoons |
Dried lime (limoo omani) powder | 3 tablespoons |
Sumac powder | 1 tablespoon |
Clove powder | 1 teaspoon |
Coriander powder | 2 teaspoons |
Parsley powder | 2 teaspoons |
Black pepper powder | 1.5 tablespoons |
Nutmeg powder | 1 teaspoon |

To make a flavorful pan kebab, it is best to use fresh spices.
First, break the dried limes, remove the seeds, and grind them into a powder using a grinder.
Dry parsley, coriander, onion, and garlic, then grind them into powder.
Grind spices such as cloves, nutmeg, mustard seeds, turmeric, and black pepper.
Combine all the ingredients in a grinder and blend for about one minute until fully mixed.
Store the spice blend in an airtight container, in a cool, dry place away from sunlight.
When preparing pan kebab, add some of this spice mix to the meat.
You can also separately add spices such as black pepper, red pepper, sumac, turmeric, and salt to the meat mixture.
At the final stage, before kneading the kebab mixture, add saffron to enhance aroma and color. You may also add saffron while frying the meat.
Sumac is optional and can be added according to taste, especially when serving.
