According to the SaedNews cooking service, Dam Pukhtak is a quick and simple homemade dish that tastes especially delicious when served with pickled vegetables (torshi liteh). If you are looking for an easy, tasty, and slightly different traditional meal, this recipe is a great choice. It is similar to tomato Dam Pukhtak, but yellow split fava beans are used instead of tomatoes, and eggs are added at the end to complete the dish.
Dried yellow split fava beans: 1 cup
Rice: 2 cups
Large onions: 2
Butter or oil: as needed
Salt and black pepper: to taste
Turmeric: 1 tablespoon
Eggs: 1 per person
Water: 1 cup
Wash the rice thoroughly to remove excess starch. Then soak it in lukewarm water with a little salt for 1 to 2 hours. Soaking helps the rice cook better, become softer, and lengthen properly during cooking.
Place the yellow split fava beans in a pot with some water and salt. Bring to medium heat, cover the pot, and let them cook until soft.
Cooking time depends on the beans’ size and freshness, usually 30 to 45 minutes. You can test them with a fork; if they mash easily, they are ready.
Finely chop the onions. Heat oil or butter in a pan over medium heat, then sauté the onions until golden.
Add turmeric and black pepper and sauté for another 30–60 seconds until the spices release their aroma. This step adds color and flavor to the dish.
Drain the cooked fava beans and add them to the fried onions. Sauté for a few minutes to combine the flavors.
Add the soaked rice along with 1 cup of water and salt. Increase the heat until the water reduces, then lower the heat. Cover with a lid and let it steam for about 45 minutes.
For extra flavor, you can add a little butter on top at the end of cooking.
Fry eggs in a pan with oil until golden. You can cook them to your preferred style (runny, medium, or fully cooked). Season with salt and black pepper.
Once the rice is fully steamed, turn off the heat and serve it on a platter. Place the fried eggs on top as garnish.
