Its preparation is not very difficult or complicated, and if you are making it at home for the first time, you will find that the method is relatively simple and straightforward.

However, you may not achieve a perfectly professional result on your first attempt. Experience takes time. By noting important tips during preparation, you can improve the quality of your Sohan in future attempts and make it more refined.


Ingredients for Sohan

  • White flour: 1 tablespoon

  • Wheat germ flour: 2 tablespoons

  • Sugar: 1 cup (about 210 g)

  • Butter: 2/3 cup (about 160 g)

  • Honey: 2 tablespoons

  • Rose water: 1/2 cup

  • Ground cardamom: 1/2 teaspoon

  • Unsteeped saffron: 1/2 teaspoon

  • Liquid glucose: 1.5 tablespoons

  • Sliced or chopped pistachios: as needed

  • Aluminum foil: 1 sheet


Preparation Method

The preparation steps are as follows:

Step 1

To make thin layered Sohan, first spread aluminum foil on your kitchen work surface and grease it completely using a cooking brush. There are different methods for making Sohan, and here we explain how to make it without an oven.

Step 2

Place a non-stick pan over heat and roast the flours (white flour and wheat germ flour together) until their raw smell disappears. Mixing and roasting them together is fine.

Step 3

Once the flour mixture is well roasted and aromatic, add sugar and rose water. Reduce the heat and stir well until the mixture becomes uniform.

Step 4

After the mixture becomes smooth and homogeneous, add the butter and continue stirring until fully combined and free of lumps.

Finally, add saffron, liquid glucose, and cardamom. Stir continuously for 20 to 30 minutes.

It is very important not to leave the mixture unattended during this stage. Continuous stirring is necessary to prevent separation and to ensure a smooth consistency.

Step 6

When ready, the mixture should become thick and cohesive, separating easily from the pan—similar to traditional Iranian confectionery like gaz.

Step 7

Pour the mixture onto the greased foil and roll it out very thin using a rolling pin.

Step 8

Decorate with pistachios or other toppings such as rose petals. Place it in a suitable serving dish.

You can gently tap the Sohan using a meat tenderizer or similar tool to create a cracked, traditional texture like store-bought versions.
