Ingredients for Zucchini Kuku:

  • Zucchini: 3 large

  • Grated garlic: 3 cloves

  • Medium onion: 1

  • Eggs: 4

  • Bread crumbs or wheat flour: 2 tablespoons

  • Brewed saffron: some

  • Salt, pepper, turmeric: as needed

  • Paprika powder: some

  • Garlic powder: some


How to Make Zucchini Kuku:

Step 1:
Peel the onion and dice it finely. Sauté it in a little oil until golden. When the onions become soft and golden, add the garlic and stir.

Step 2:
Trim the ends of the zucchinis and grate them with the skin on. Then squeeze the zucchini to remove excess water with your hands. Mix the grated zucchini with the sautéed onions, bread crumbs, eggs, garlic powder, paprika, salt, pepper, turmeric, and saffron. Stir well.

Step 3:
Place a pan on heat and add some oil. Spread the mixed kuku batter evenly in the pan.
