Baked potatoes are one of the most delicious dishes worldwide and are very popular. You can serve these baked potatoes with various sauces and dips. You can choose to peel the potatoes or bake them with their skin, but for baking the potatoes, you can use an oven, a pot, or even a microwave. Ingredients for Fragrant Baked Potatoes:

  • 4 potatoes

  • 1/4 cup olive oil

  • 1/4 cup grated Parmesan cheese (Parmigiano or Parmesan)

  • 1 teaspoon garlic powder

  • 1 teaspoon shallot powder

  • 1 teaspoon thyme

  • 2 tablespoons chopped fresh parsley

  • 2 teaspoons golpar (wild rue)

  • Salt and pepper to taste

  • Saffron water as needed

How to Make Fragrant Baked Potatoes:

  1. First, wash the potatoes with their skin on and cut them in half. Then, cut each half into three pieces lengthwise.

  2. Fill a bowl with cold water and ice, and place the potatoes in it. Let them sit for 30 minutes, then remove them and dry them thoroughly with a towel.

  3. Mix the olive oil, half of the garlic powder, half of the shallot powder, saffron, half of the thyme, pepper, and salt. Place the mixture into a plastic bag, add the potatoes, and shake the bag well. Let it rest in the refrigerator for about half an hour, then shake it again and strain the potatoes.

  4. Line a baking tray with parchment paper and arrange the potatoes on it. Sprinkle the remaining spices over the potatoes (add golpar too). Use a brush dipped in olive oil to coat the potatoes.

  5. Place the tray in the oven, preheated to 240°C (464°F), and bake for 30-40 minutes until the potatoes are golden and crispy.

  6. After the potatoes are done, place them hot in a dish, then add the mixture of grated Parmesan cheese and chopped parsley. Gently shake the dish to mix the ingredients, then serve with tomato sauce.
