According to Saednews, Sogan kebabı is a popular and flavorful kebab from Istanbul made with meat and whole small onions baked together in a delicious sauce.
500 g ground beef (medium fat)
1 kg small onions
Black pepper, cumin, salt, thyme
Red pepper paste
3–4 tablespoons pomegranate sauce (thinner than pomegranate molasses)
½ cup water
Tomatoes and green peppers
Peel and wash the onions, leaving a thin layer of skin on them for better flavor. Knead the ground beef thoroughly with the spices and red pepper paste.
Take small portions of the meat mixture and shape them into balls. Place each meatball inside the slit onions.
Arrange the stuffed onions in a baking dish. Add one cup of water and a little olive oil over them, then bake in the oven.
After 30 minutes, mix 3–4 tablespoons of pomegranate sauce with half a cup of water and pour it over the kebabs. Return to the oven and bake for another hour until fully cooked.
Serve warm with tomatoes and green peppers.
