The fresh, zesty fragrance of lemon is the dominant note in this pickle, enhancing its overall taste and making it especially flavorful.
According to Saednews, Pickles are a delicious accompaniment to meals and come in many varieties, including white onion pickles, red onion pickles with beetroot, pickled garlic, pickled peppers, pickled okra, and more. Lemon pickles are another popular variety, made with fresh lemons and commonly served alongside main dishes. They can be prepared either with vinegar or without it. Below is a popular method for making lemon pickles with vinegar and cloves.

8 lemons
½ cup sea salt
12 small pickling onions
3–5 garlic cloves
5 cups vinegar
Cloves, as needed
Ground black pepper, as needed
Fresh ginger, as needed
Chili peppers, as needed

Wash the lemons thoroughly and place them in a colander to drain. Leave them for a full day so they become completely dry.
Cut each lemon into four pieces and remove all the seeds. Removing the seeds is important because they can make the pickles bitter. Sprinkle the lemon pieces generously with salt.
Transfer the salted lemon pieces to a clean container. Cover the container with a clean cloth to protect the lemons from contamination while allowing air to circulate. Keep the container at room temperature, outside the refrigerator.
Let the lemons sit for about 7–10 days. During this period, turn the lemon pieces over every day using a clean, completely dry cooking brush or spoon. This helps release the juice from the lemons.
Insert as many cloves as you like into the small pickling onions. Pack the lemons into clean glass pickle jars, placing the garlic cloves and clove-studded onions between the lemon pieces.
Pour the vinegar into a saucepan. Add pieces of fresh ginger and the remaining spices. Bring the mixture to a boil, then let it simmer gently for a few minutes.
Strain the spiced vinegar and pour it into the jars until the lemons are completely covered.
Seal the jars tightly and store them in a cool, dry place. Allow the pickles to develop their flavor before serving.
