SAEDNEWS: If you’re a fan of traditional ice cream, read this article to the end. You’ll learn how to make delicious traditional ice cream at home, so you won’t need to buy it anymore.
According to Saednews, You might think the taste of traditional ice cream depends entirely on personal preference, but that is not really the case. A good traditional ice cream should have a balanced level of sweetness. If it is excessively sweet or lacks enough sweetness, it cannot be considered a well-made traditional ice cream.
The ingredients should also be thoroughly combined to create a completely smooth, soft, and stretchy texture. Unfortunately, some people use artificial coloring instead of saffron when making traditional ice cream. This can negatively affect the aroma and flavor of this authentic Iranian dessert.
Below is a recipe for making delicious, authentic traditional Persian ice cream at home.
1 liter full-fat milk
500 grams sugar
100 grams regular heavy cream
1 tablespoon salep (sahlab)
Saffron, as needed
½ small glass rose water
50 grams pistachio slivers

To begin making saffron ice cream with salep, spread the cream evenly across a tray. Use a flat utensil or another smooth object to spread it into a thin layer approximately 2 millimeters thick. Place the tray in the freezer until the cream is completely frozen.
This step is particularly important because once frozen, the cream helps give traditional ice cream its soft and stretchy texture while also enhancing its final flavor. Freezing the cream before adding it to the ice cream allows it to blend more effectively with the milk and sugar while helping the mixture develop its characteristic traditional texture.
Next, pour the full-fat milk into a saucepan and place it over medium heat until it reaches a boil. Meanwhile, prepare the saffron and add it to the milk along with the rose water so that their aroma and flavor are fully released into the milk. This is the foundation of the ice cream's flavor, so make sure the milk does not boil over. Continue stirring to prevent it from sticking to the bottom of the pan.
For the salep-based method, combine the sugar and salep in a separate bowl. Gradually add the mixture to the hot milk while continuously stirring. Keep stirring until the mixture becomes thick and stretchy. Achieving the right consistency at this stage is important because it helps the ice cream retain its soft and elastic texture after freezing.
If you prefer a simpler method, traditional ice cream can also be prepared without salep. However, salep helps produce a more pronounced stretchy texture.
Once the milk mixture has thickened, turn off the heat and place the saucepan over ice to cool it quickly. Stir the mixture occasionally to help maintain its smooth and stretchy consistency. Once cooled, transfer the mixture to the freezer and allow it to freeze.
To achieve a better texture and the characteristic stretchy consistency of traditional Persian ice cream, remove the mixture from the freezer every 30 minutes and stir it thoroughly. Repeat this process five times to help the ice cream become smooth and stretchy.

Tip: When making saffron ice cream without salep, repeatedly removing the mixture from the freezer and stirring it thoroughly as it freezes is especially important. This helps create a soft, smooth, and professional texture.
Once the mixture has frozen, chop the frozen cream and add it to the ice cream along with the pistachio slivers. Transfer the ice cream to serving bowls and serve.
The pistachios and frozen cream add extra flavor and texture, while the stretchy consistency creates the distinctive and enjoyable experience of traditional Persian ice cream.
Traditional homemade Persian ice cream has a distinctive flavor and texture, but achieving the best result requires attention to a few simple details. These tips help produce ice cream that is soft, stretchy, flavorful, and closer to the traditional style.
Using full-fat milk, genuine saffron, and fresh cream can significantly improve the flavor of the ice cream. Fresh, high-quality pistachio slivers also provide an appealing appearance and pleasant flavor. The quality of the ingredients is equally important when preparing other varieties, such as vanilla ice cream.
When heating the milk and adding sugar, make sure the proportions are well balanced. Too much sugar can make the ice cream feel heavy and overpower its traditional flavor. This is important whether you use salep or prepare the ice cream without it.
Frozen cream and pistachio slivers should be added toward the end of the preparation process so that the ice cream's texture and appearance remain intact. Adding them too early can cause the cream to break apart and the pistachios to interfere with the smooth texture of the ice cream.
