SADEDNEWS: Vegetable Sushi is a healthy, diet-friendly seafood dish that can be prepared and served in just 45 minutes. This sushi is made with soy sauce and fresh vegetables.
1½ cups water
1½ cups sushi rice
⅓ cup white vinegar
6 radishes
1 bunch green onions
1 yellow bell pepper
1 carrot
1 cucumber
4 sheets of nori (dried seaweed)
½ avocado
1 teaspoon salt
1 teaspoon sugar
Soy sauce, as desired, for serving

Place the cooked rice in a bowl and gently mash and separate it with the back of a fork.
In a small bowl, combine the vinegar, salt, and sugar and stir well until blended. Pour the mixture over the rice and gently stir with a spoon until the seasoning is evenly absorbed. Cover the bowl and set it aside while you prepare the remaining ingredients.
Wash and peel the vegetables. Pat them dry, then cut them into thin matchstick-sized strips. To prevent the avocado from turning brown, drizzle it with a little lemon juice.
Place a sushi-rolling mat on your work surface and cover it with a sheet of parchment paper.
Divide the seasoned rice into four equal portions. Spread one portion evenly over the parchment paper, making the rice layer about 2 cm wider than the nori sheet.
Place one sheet of nori over the rice, with the shiny side facing down against the rice. Divide the prepared vegetables into four portions and arrange one portion lengthwise across the nori. Avoid placing the vegetables too close to the edges, as they may fall out while rolling.
Wet your hands slightly and carefully roll the sushi toward yourself using the bamboo mat. If some rice sticks to the parchment paper, use your damp fingers to gently incorporate it into the roll.
Repeat the process with the remaining rice, nori, and vegetables.
Cover the prepared sushi rolls with a damp towel until ready to serve.
When serving, use a sharp, slightly damp knife to cut each roll into four pieces. Serve the sushi with soy sauce.
