“Shrimp and Vegetable Stir-Fry” — How to Make a Flavorful, Healthy Seafood Dish

Ingredients

  • 111 g cleaned shrimp

  • 111 g green beans

  • 1 medium carrot

  • 1 tablespoon fried onions

  • 1 tablespoon chopped parsley

  • 2 tablespoons olive oil

  • 1 teaspoon tomato paste

  • Salt, black pepper, and turmeric, as needed

Method

After cleaning the green beans, cook them with a little water, salt, pepper, and turmeric. Once the beans are cooked and the water has evaporated, add 1 tablespoon of olive oil and lightly fry them over medium heat. Add the tomato paste while frying and stir well.

Cut the carrot into thin, long strips. Place it in a separate pan with the remaining olive oil, a little salt, pepper, turmeric, and 2 tablespoons of water. Cover the pan and cook over low heat, stirring occasionally, until the carrots are slightly softened and lightly fried.

Clean and wash the shrimp, then cook them with a little salt and turmeric for about 4–5 minutes, until they are tender. Do not overcook the shrimp, as they can become tough. Alternatively, you can steam them.

Add the cooked shrimp to the fried onions, chopped parsley, green beans, and carrots. Mix everything together and serve the shrimp and vegetable dish in your preferred serving dish.
