Most of the ingredients are common pantry staples, and you can easily substitute anything you don't have on hand. The crispy baguette, flavorful meat filling, vegetables, and melted cheese make it a delicious option for lunch, dinner, or a party snack.
250 g (9 oz) ground beef
1 medium onion, grated
2 medium potatoes, diced
½ bell pepper, diced
100 g (3.5 oz) mushrooms, sliced
2–3 tablespoons tomato paste
1 teaspoon ground turmeric
1 teaspoon ground black pepper
½ teaspoon red chili powder
1 teaspoon dried thyme
Mozzarella or pizza cheese, as needed
Salt, to taste
Baguettes, as needed
2 tablespoons vegetable oil

Heat the vegetable oil in a large skillet over medium heat. Add the ground beef, grated onion, black pepper, red chili powder, and salt. Cook for about 15 minutes, stirring occasionally until the meat is browned.
Stir in the tomato paste and cook for another 2–3 minutes until it becomes fragrant and fully combined with the meat.
Fry the diced potatoes in a separate pan until golden and crispy. Drain on paper towels.
In another skillet, sauté the sliced mushrooms over high heat with a small amount of oil or butter. Cooking them over high heat helps prevent them from releasing too much moisture.
Combine the cooked beef, fried potatoes, mushrooms, and diced bell pepper in one pan. Cook together for about 2 minutes, then stir in the dried thyme. Remove from the heat.
Slice the top of each baguette lengthwise without cutting all the way through. Carefully hollow out some of the soft bread inside to make room for the filling.
Sprinkle a layer of shredded mozzarella inside each baguette.
Fill the baguettes with the prepared meat and vegetable mixture. Add a little more cheese between the layers of filling for extra richness.
Cover the top generously with the remaining shredded cheese.
Preheat the oven to 180°C (350°F) for 15 minutes. Arrange the stuffed baguettes on a baking tray and bake on the center rack for about 15 minutes, or until the cheese is completely melted.
For a golden, bubbly topping, switch on the broiler (grill) during the last 5 minutes of baking.
