According to Saednews, Padrazi cookies are among those nostalgic Persian sweets that are deeply rooted in the ancient culture and culinary traditions of Iran.
With their soft and delicate texture, these traditional cookies inspire many people to learn the recipe and prepare them for gatherings, celebrations, and special occasions. Below is a step-by-step guide to making homemade Padrazi cookies.
220 grams pastry shortening or baking oil
130 grams white flour
130 grams chickpea flour
110 grams rice flour
50 grams powdered sugar
50 grams honey
2 teaspoons ground cardamom
1 tablespoon yogurt
1 tablespoon vegetable oil
1 teaspoon brewed saffron
1 egg yolk

First, sift the powdered sugar thoroughly and place it in a large suitable bowl. Add the pastry shortening or baking oil and mix well. Using an electric mixer, beat the mixture for about 5 minutes until it becomes lighter in color and smooth.
Add the ground cardamom, honey, and brewed saffron to the sugar and oil mixture. Beat the ingredients on high speed for about 1 minute until the mixture becomes completely smooth and uniform.
In another bowl, combine the white flour, rice flour, and chickpea flour.
Sift the mixed flours three times to make them lighter and smoother. Gradually add the flour mixture to the sugar and oil mixture.
Gently knead the dough with your fingertips until it comes together into a soft, smooth, and cohesive dough.
Place the dough inside a freezer bag and let it rest at room temperature for one full day. After resting, transfer the dough onto a working surface.
Cover the dough with a freezer bag or plastic sheet and roll it out using a grooved rolling pin. Flatten the dough to a thickness of about 0.5 to 1 centimeter.
Line a baking tray with parchment paper. Cut the dough into desired shapes using a suitable cookie cutter.
Arrange the shaped cookies on the baking tray.
Prepare the topping by separating the egg yolk and mixing it with yogurt and brewed saffron. Add vegetable oil and stir well until combined.

Brush the topping mixture over the cookies using a pastry brush.
Preheat the oven to 175°C (347°F). Place the tray on the middle rack of the oven and bake the cookies for approximately 15 minutes.
After baking, turn on the oven’s top grill briefly to give the cookies a beautiful golden color.
Remove the cookies from the oven and allow them to cool completely. Arrange the Padrazi cookies on a serving plate and enjoy their delicate texture and traditional Persian aroma.
