Rice: 4 cups
Spinach: 1 kilogram
Raw beetroot: 3 or 4 pieces
Onion: 1
Turmeric and salt: as needed

Step 1: Sautéing onion and spinach
Dice the onion finely and sauté it in some oil with turmeric until it becomes light and golden. Then add the washed and chopped spinach and sauté with the onion for a bit until the excess water from the spinach evaporates. This step helps prevent the rice from becoming mushy.
Step 2: Cooking the rice
After sautéing the spinach, add the washed rice and water to the pot. Use slightly less water than usual for steamed rice because the spinach will release some moisture. Let the rice water fully absorb.
Step 3: Adding the beetroot
Thinly slice the beetroot and after the rice water has been absorbed, layer the beetroot slices between the rice. This prevents the beetroot color from fully bleeding into the rice, keeping the rice colorful and beautiful.
