According to the Cooking Service of Saed News, Green Bean Kuku is one of the dishes that some of us have enjoyed in the city of Tabriz. However, like some other dishes, it may be made mostly in one or a few cities, but in other places, some people also prepare it and love it. This dish is considered by some to have a delightful taste and they enjoy it, but some of you may have never prepared this dish or might not even be familiar with its name. In any case, this dish also has fans who make it very deliciously. In this recipe, we do not use meat, and it is served with bread.

Ingredients for Green Bean Kuku

  • Green beans: 200 grams

  • Potato: 1 medium

  • Carrot: 1 medium

  • Onion: 1 medium

  • Oil and water: as needed

  • Eggs: 2

  • Salt, pepper, turmeric: as needed


How to Make Green Bean Kuku

First, wash, clean, and chop the green beans. Put them in some salted water and cook on heat until they soften a bit. Then turn off the heat and drain the beans in a colander to cool slightly. Next, peel and grate the potato, and grate the carrot. Then grate the onion separately and squeeze out its water. Take a suitable bowl and mix the potato, carrot, and onion together, then add the green beans along with salt, pepper, and turmeric.

Next, break the eggs into a bowl, and if they are fine, add them to the mixture and combine everything well. Then take an appropriate frying pan, heat it, and add some oil. When the oil is hot, pour the mixture in. Reduce the heat and let one side fry until golden, then turn it over to fry the other side. Once both sides are golden, place it on a serving dish and serve it nicely.


Important Tips

  • If the mixture doesn’t hold together well and crumbles, add one tablespoon of flour.

  • Be careful not to mash the green beans while mixing.

  • You can pour the entire mixture into the pan at once to fry.

  • Or, you can fry spoonfuls of the mixture individually.

  • Some people add chopped colorful bell peppers to the mixture.

  • For garnish, you can use tomatoes, pickled cucumbers, and corn.

  • You can adjust the portions to serve fewer or more people.
