Ingredients:
Medium eggplants: 4
Breadcrumbs: 1 cup
Eggs: 3
Salt: as needed
Cornstarch: 2 teaspoons
Yogurt or garlic sauce (optional, for serving)
Preparing the Eggplants:
Wash the eggplants and peel them (or leave the skin on if preferred). Slice them into thin rounds or medium-sized cubes.
Soaking:
Place the eggplant pieces in a bowl of water with a pinch of salt for 20–30 minutes to remove bitterness and prevent them from absorbing excess oil. Drain and pat dry with paper towels.
Preparing the Coating:
If you wish to coat the eggplants, beat the eggs in one bowl and place the breadcrumbs in another bowl.
Coating the Eggplants:
Dip each piece of eggplant first into the breadcrumbs, then into the beaten eggs, ensuring it is fully coated.
Frying:
