Saed News: Sweet Kofta is a local dish from Kermanshah with a recipe similar to rice kofta. The difference between sweet kofta and rice kofta lies in its taste; this Kermanshahi dish has a sweet and sour flavor. What matters most when preparing this dish for dinner or lunch is shaping the koftas so that they don't fall apart. In this article, we will teach you how to prepare traditional Kermanshahi sweet kofta and share some tips and tricks for making it.
Ingredients for Kurdish Sweet Kofta:
Rice: 200 grams
Ground meat: 250 grams
Onion: 1 medium
Egg: 1
Dried mint: 1 tablespoon
Vinegar: 2/3 French cup
Sugar: 100 grams
Salt, black pepper, and turmeric: to taste
Frying oil: as needed
Bread and fresh herbs: for serving
Preparation time: 1 hour
Cooking time: 1 hour
Steps for Preparing Kermanshahi Sweet Kofta with Sugar and Vinegar:
Step 1: Soak the Rice
Rinse the required amount of rice several times, then soak it in a bowl with water and a pinch of salt. Let it soak for about an hour.
Step 2: Cook the Rice
Once the rice has soaked, drain it. In a suitable pot, add the rice and one cup of water, then cook it until it's completely soft and the water is absorbed. Remove it from the heat and set it aside.
Step 3: Knead the Ground Meat
Grate one onion coarsely. Squeeze out the onion juice and keep the pulp. In a bowl, mix the ground meat and the onion pulp. Knead the mixture for at least 15 minutes to make it sticky and well combined.
Step 4: Add the Rice and Spices
Add the cooked and softened rice to the meat mixture. Then, add the spices (salt, black pepper, and turmeric). Knead again until all ingredients are well combined. Optionally, add dried mint and mix well.
Step 5: Add the Egg
Add one egg to the mixture and knead until the ingredients become sticky.
Step 6: Shape the Koftas
Take a portion of the mixture (about the size of an orange) and shape it into a ball using your hands. Continue shaping all the koftas. Place them in a pot without stacking or pressing them too much.
Step 7: Prepare the Kofta Sauce
For the sauce, heat two tablespoons of oil in a small pot, then add one cup of water, sugar, and vinegar. Let it simmer over low heat until the sugar dissolves, and the sauce thickens.
Step 8: Cook the Koftas
Pour the sauce over the koftas, and place the pot over low heat with the lid slightly open to prevent cracking. Let the koftas cook for about an hour until fully cooked.
Final Step: Serve the Sweet Kofta
After one hour, your Kermanshahi sweet kofta is ready. Serve it in a dish with fresh bread and herbs and enjoy the sweet and sour flavor.
