Saadnews: Baklava is one of the famous sweets in Iran and Turkey. One of the most famous Iranian baklavas is from the city of Yazd. This baklava is extremely delicious and can be easily made at home. Baklava is typically enjoyed as a dessert or a snack alongside tea. The nuts inside the baklava make it both nutritious and tasty.
Ingredients for Yazdi Baklava
For the dough:
Egg yolks: 2
Milk: half a cup
Oil: 1/4 cup
Baking powder: 1/2 teaspoon
Flour: 2 cups
Melted butter: 100 grams
For the syrup:
Water: 2/3 cup
Rosewater: 1/3 cup
Saffron extract: 2 tablespoons
Sugar: 1 cup
Cardamom: 1 teaspoon
For the filling:
Ground walnuts: 300 grams
Powdered sugar: 1/2 cup
Cardamom: 1 teaspoon
Instructions to prepare Yazdi Baklava:
First step:
To make the delicious baklava, start by placing the sugar and water into a pot. Then, add rosewater, saffron, and cardamom. Heat the mixture until the sugar completely dissolves. Take a bowl and mix the filling ingredients in it.
Second step:
The filling consists of ground walnuts, cardamom, and powdered sugar. In another bowl, mix the egg yolks, milk, and oil until well combined. Gradually add the flour and baking powder and knead until the dough no longer sticks to your hands.
Third step:
Let the dough rest for 1 hour at room temperature. After that, divide the dough into four equal parts. Dust the work surface with flour and roll out each piece of dough very thinly using a rolling pin.
Fourth step:
Place a mold on the rolled dough and cut it. Grease the mold with melted butter first. Place a layer of dough at the bottom of the mold, then apply butter again. Place another layer of dough on top.
Fifth step:
Apply butter again, then add the filling mixture and press it down. Afterward, brush butter on top, then place another layer of dough. Brush butter again and add one more layer of dough. For the top layer, brush with a mixture of egg yolk and saffron.
Sixth step:
Cut the baklava into pieces and preheat the oven to 170°C (340°F). Bake for about 45 minutes until the dough turns golden brown. Remove from the oven and while it's still hot, pour cold syrup over the baklava and garnish with pistachio powder.
