Like Yazdi cakes, raisin cookies are considered a ceremonial sweet, making them a popular choice for serving at religious events. You can bake this delicious treat to your liking, either soft or dry.

Ingredients for Making Raisin Cookies

  • Cake flour: 1 cup

  • Egg: 1

  • Powdered sugar: ⅔ cup

  • Butter: 75 grams

  • Raisins: ¼ cup

  • Vanilla essence: ¼ teaspoon

How to Make Raisin Cookies

Step 1:
To make raisin cookies, first take the butter and eggs out of the fridge and let them come to room temperature. Then, choose a large bowl and add the butter along with powdered sugar and vanilla essence. Mix well until they are combined and smooth.

Step 2:
Continue mixing the butter, powdered sugar, and vanilla essence until a creamy dough forms. Once the ingredients are well mixed, add the egg and mix again until everything is smooth and combined.

Step 3:
Sift the flour twice, then gradually add it to the mixture while mixing on a low speed with an electric mixer. Only mix the flour in until everything is just combined.

Step 4:
Once the flour is well incorporated into the dough, it’s time to add the raisins. Clean the raisins by removing any debris, then soak them in cold water for 20 minutes.

Step 5:
Add the soaked raisins to the dough and mix gently to ensure the raisins are evenly distributed throughout the dough. It’s best to preheat the oven to 160°C (320°F) for 15 minutes before baking so that the dough is ready when the oven reaches the right temperature.

Step 6:
Raisin cookies tend to stick to the baking sheet, so it’s important to line the baking tray with parchment paper. If you don’t have parchment paper, you can grease the tray with cake release spray or oil to prevent the cookies from sticking.
