Olive oil | 2–3 tablespoons |
Put butter and a little olive oil in a pan to prevent the butter from burning. Add the garlic and then the chopped chicken together with salt, pepper and garlic powder; cover the pan and let it simmer on low heat so the chicken releases its juices and both fries and cooks through.
After the chicken is cooked and fried, remove the lid and add the chopped mushrooms. Add a minimal amount of lemon juice so the mushrooms do not darken, and sauté on high heat until the mushrooms’ liquid evaporates and the mushrooms are lightly sautéed.
Cook the pasta in salted boiling water with a bit of oil according to the package instructions, then drain it into a colander to remove excess water.
In a separate large pan, sauté the flour with the butter.
Then gradually add the milk and stir so no lumps form; let them cook on the heat for a few minutes. The milk and flour begin to thicken — do not let it become too thick or too thin; just let the milk gain a light glaze/consistency.
Finally add the cream and thyme and mix.
Add the chicken, mushrooms, and pasta to the sauce and stir.
Add the Parmesan cheese at the end, then turn off the heat after a few minutes.
If the sauce becomes very thick, you can add a little milk. After plating the dish, garnish with chopped fresh parsley and a sprinkle of Parmesan cheese.
