How to Make Delicious and Simple Ratatouille

Ingredients:

  • 1 onion

  • 2 cloves of garlic

  • 3 eggplants

  • 2 eggs

  • 2 tomatoes

  • 1 bell pepper

  • Olive oil

  • 1 tablespoon of thyme powder

  • Salt and black pepper

  • 1 tablespoon of tomato paste

Instructions:

  1. Start by peeling and washing the eggplants, then chop them into large cubes and set them aside.

  2. Peel and wash the garlic and onion. Chop the onion into small pieces and mince the garlic.

  3. In a large pan, heat some olive oil. Add the onion and garlic, sautéing them until soft and fragrant.

  4. Wash the bell pepper, chop it into small cubes, and add to the pan. Sauté until the peppers soften, then remove the mixture from the pan and set it aside.

  5. Add more olive oil to the pan and fry the eggplants until they are slightly cooked.

  6. Wash and chop the tomatoes into large cubes, then add them to the eggplants along with the onion, garlic, and bell pepper mixture. Stir well.

  7. Sprinkle thyme powder, salt, and black pepper over the mixture and stir to combine, allowing the spices to infuse the ingredients.

  8. In a small pan, heat a bit of oil and sauté the tomato paste until the oil turns red and the paste loses its raw smell. Add the sautéed tomato paste to the ratatouille mixture.

  9. Pour half a cup of water over the ratatouille, mix well, reduce the heat, cover the pan, and let the ingredients cook thoroughly until all the liquid evaporates.

  10. Once the water has evaporated and the ratatouille is cooked, crack the eggs on top of the mixture and allow them to cook completely. Serve in the desired dish.
