Sushi is one of the most popular dishes in East Asian countries, especially Japan. This rice-based dish comes in many varieties and can include vegetables, eggs, fish, or seafood, depending on taste preferences. Below, you’ll find a step-by-step guide to preparing vegetable sushi at home.
Water: 1½ cups
Rice: 1½ cups
White vinegar: ⅓ cup
Radish: 6 pieces
Scallions: 1 bunch
Yellow bell pepper: 1 piece
Carrot: 1 piece
Cucumber: 1 piece
Seaweed sheets (Nori): 4 sheets
Avocado: ½ piece
Salt: 1 teaspoon
Sugar: 1 teaspoon
Soy sauce: As desired (for serving)
Prepare the Rice:
Place the cooked rice in a large bowl and mash it lightly with a fork.
Mix the salt, sugar, and vinegar in a separate small bowl until fully dissolved.
Add this vinegar mixture to the rice and stir thoroughly so it’s evenly absorbed.
Cover the bowl and let the rice sit while you prepare the vegetables.
Prepare the Vegetables:
Wash and peel all the vegetables.
Slice them into thin, matchstick-sized strips.
To prevent the avocado from browning, sprinkle it with a little lemon juice.
Set Up the Rolling Mat:
Place a sushi rolling mat on your work surface and cover it with a sheet of parchment paper.
Divide the rice into 4 equal portions.
Assemble the Sushi:
Spread one portion of rice evenly over the parchment paper, leaving a 2 cm border.
Place a sheet of seaweed (Nori) shiny side down on top of the rice.
Arrange one portion of the sliced vegetables lengthwise across the Nori sheet, avoiding the edges to prevent them from falling out during rolling.
Roll the Sushi:
Wet your hands slightly to prevent sticking.
Start rolling the sushi carefully from your side using the bamboo mat.
If the rice sticks to the parchment paper, gently peel it away while rolling.
Repeat the process with the remaining rice, Nori, and vegetables.
Serve the Sushi:
Before serving, cover the sushi rolls with a damp towel to keep them fresh.
Using a sharp, damp knife, cut each roll into 4 pieces.
Serve with soy sauce on the side.
