Ingredients for a One-Egg Cake:
Egg: 1
Milk: 1 cup
Flour: 1½ cups
Vegetable oil: ¼ cup
Sugar: 1 cup
Vanilla: a pinch
Baking powder: 1 tsp
Instructions:
Preheat the oven to 180°C (350°F). Grease and flour your pan. Sift the flour and baking powder three times.
Beat the egg, sugar, and vanilla with a mixer for 10–15 minutes until the mixture triples in volume and becomes thick and elastic.
Add milk and oil, mixing just until combined.
Gradually fold in the flour using a spatula or spoon, mixing in circular motions.
Pour the batter into the pan and bake for 40–45 minutes.
For a zebra cake: double the recipe and divide the batter into two equal parts. Sift two tablespoons of cocoa into one portion and two tablespoons of flour into the other. Mix each well. Using two ladles—one for the cocoa mixture and one for the plain—alternate pouring the batter from the center outward. Once all the batter is in the pan, use a knife or toothpick to create patterns from the center outward (or vice versa).
If you prefer, you can skip the zebra pattern and make a classic sponge cake, adding raisins and walnuts.
Even with just one egg, you can make the zebra version—you don’t need to double the ingredients.
