How to Make Eggplant and Chicken: A Delicious, Quick, and Easy Dish

According to Saednews, Eggplant can be used to prepare a wide variety of delicious dishes. Chicken and eggplant stew is a flavorful, nutritious, and easy meal that can be prepared at home with a few simple ingredients in a relatively short time. It is especially suitable for dinner or iftar.

Ingredients

  • 4 bone-in chicken pieces

  • 1 onion, chopped

  • 4 cloves garlic, grated or minced

  • 3–4 eggplants

  • 6 tablespoons verjuice or fresh lemon juice

  • 4 tablespoons sour grapes (ghooreh)

  • Salt, black pepper, and spices, as needed

  • Tomato paste, as needed

  • Tomatoes, as needed

  • Turmeric, as needed

  • Cooking oil

How to Make Chicken and Eggplant Stew

Start by preparing the chicken. Heat 2 tablespoons of oil in a large pot over high heat. Add the chicken pieces and fry for about 5 minutes, turning them once so they become lightly browned on all sides. Remove the chicken from the pot and set it aside.

Add the chopped onion to the same pot. Cook over medium heat for about 10 minutes, stirring occasionally, until the onion becomes lightly golden. Add the garlic and turmeric and sauté for another 2 minutes. Then add the tomato paste and cook for another 2 minutes.

Return the chicken to the pot and add the tomatoes and enough water to create the stew. Season with 1 teaspoon of salt and some black pepper. Cover the pot and bring the mixture to a gentle boil. Reduce the heat and let the chicken cook gently for about 30 minutes.

Meanwhile, peel the eggplants and cut them into quarters. Toss them with the remaining teaspoon of salt. Heat a large frying pan over medium heat and sauté the eggplants with a small amount of oil for 15–20 minutes, turning them occasionally, until they are lightly golden on all sides. Remove them from the pan and set aside.

After the chicken has cooked for 30 minutes, add the verjuice or fresh lemon juice and the sour grapes. Stir gently and continue cooking for another 30 minutes.

Arrange the partially cooked eggplants on top of the stew and gently press them down so they are partly submerged in the sauce. Cover the pot and cook over low heat for another 30 minutes.

At this point, the chicken should be tender and fully cooked. Remove the pot from the heat, taste the stew, and adjust the seasoning if necessary. Let it rest for about 5 minutes before serving.

Carefully transfer the stew to a serving dish, taking care not to break apart the eggplants so they retain their shape.
