Cooking the Lebanese Meat Pies

  1. Lightly flour your work surface.

  2. Take one dough ball and roll it out with a rolling pin until it is very thin.

  3. Sprinkle a little flour over a flat plate and place the rolled-out dough on it.

  4. Spread about 2 heaping tablespoons of the prepared meat mixture evenly over the dough, leaving a small border around the edges.

  5. Heat a dry frying pan over medium heat.

  6. Carefully transfer the prepared dough into the hot pan. Using the plate can make this step easier.

  7. Cover the pan and cook for approximately 5 minutes.

  8. Remove the lid and continue cooking for another 2–3 minutes, allowing the dough to cook through and the meat topping to become fully cooked.

  9. Repeat the process with the remaining dough and meat mixture, stacking the cooked pies on top of one another.

How to Serve

For softer, more flexible meat pies that are easy to roll, cover the cooked pies for a few minutes.

To serve, add lettuce, tomato, and other fresh vegetables inside the meat pie. Squeeze some fresh lemon juice over the filling, then fold or roll it into a bite-sized wrap.
