To prepare Kurdish chicken kuku, you will need the following ingredients:
Chicken breast: 1 piece
Firm tomatoes: 2 pieces
Onion: 1 piece
Small red or yellow bell pepper: 1 piece
Tomato paste: 1 tablespoon
Eggs: 2 pieces
Thick brewed saffron: a small amount
Salt, black pepper, and turmeric: as needed
Dried baguette bread crumbs: 2 tablespoons
Oil for frying: as needed

First, prepare the ingredients. Cut the chicken breast into small pieces. This helps the chicken cook better and allows it to blend well with the other ingredients. Then finely chop the onion and sauté it in a pan with a little oil until it becomes soft and golden.
Tip: Using fresh onions
Fresh onions add a better aroma and flavor to the dish and also provide more nutritional benefits. Therefore, choose your onions carefully.
After preparing the onion, add the chicken pieces and sauté them over medium heat. At this stage, add turmeric and black pepper to the chicken to enhance its flavor. Once the chicken changes color and becomes partially cooked, add the tomato paste and continue sautéing until the aroma of the paste is released.
After the chicken and onions are well sautéed, add the chopped tomatoes and bell pepper to the mixture. Sauté these ingredients for another 5–7 minutes until they soften and their flavors combine.
Now that the main ingredients are ready, crack the eggs into a separate bowl and beat them well. Then add the brewed saffron and dried bread crumbs to the eggs and mix again until everything is combined. This mixture serves as the main base of the kuku.
Add the sautéed ingredients to the egg mixture and stir well. At this stage, add salt according to your preference and mix everything thoroughly so that all ingredients are evenly combined.
Place a large frying pan over low heat and add some oil. Once the oil is hot, gently pour the kuku mixture into the pan and smooth the surface with a spoon or spatula. Allow the kuku to cook slowly for 10–15 minutes.
(Low heat helps the kuku cook evenly and become golden while preventing it from burning.)

After one side of the kuku becomes golden, flip it using a large plate and fry the other side as well. This step may require some practice, but with a little care, it can be done easily.
