This popular dish, with its crispy skin, appetizing golden color, and pleasant aroma, can be easily prepared at home and become the highlight of your dining table.
1 medium whole chicken
5 tablespoons brewed saffron
50 g butter
2 medium tomatoes
2 bay leaves
1 large bell pepper
2 medium onions
Salt and black pepper as needed
Rosemary and paprika as needed
Step 1:
First, clean the chicken by removing the internal organs by hand. Do not cut inside the chicken with a knife. Wash the chicken thoroughly and let it drain completely until all excess water is removed.
Step 2:
After the chicken is dry, massage all internal and external parts with one tablespoon of salt. Then cut the onion and bell pepper into large strips and mix them well with spices (paprika, black pepper, and rosemary).
Step 3:
Fill the chicken cavity with the onion and bell pepper mixture along with bay leaves. Place the chicken in a zip-lock bag and marinate it in the refrigerator for at least 8 hours (up to 24 hours) so it absorbs the flavors completely.
Step 4:
After marinating, remove the chicken from the refrigerator and take out the stuffing mixture. Then massage the entire chicken with 4 tablespoons of thick brewed saffron.
Step 5:
Place the chicken again in a closed container and refrigerate for another 30 minutes. After that, stuff the chicken again with some of the onion, bell pepper, and chopped tomatoes.
Step 6:
Carefully sew the chicken cavity using kitchen thread with small stitches. Also tuck the wings and legs inside. The stitching does not need to be perfect, but it must hold the chicken together during cooking.

Step 7:
Insert the rotisserie rod through the chicken so that it stays balanced and does not shake while rotating. Melt the butter with the remaining saffron over heat.
Step 8:
Brush the chicken with the saffron-butter mixture. Preheat the oven to 220°C (428°F) and roast the chicken for about 1 hour and 30 minutes until fully cooked.
Step 9:
During cooking, baste the chicken every 30 minutes with the saffron-butter mixture to enhance flavor and color. Once done, remove it from the oven, place it on a serving dish, and cut off the threads.
One common issue when making roasted chicken is that it can make the oven messy with grease. To avoid this, you can bake the chicken in a heatproof dish instead.
Place the marinated chicken in a Pyrex dish, cover it with aluminum foil, and bake it. After it is fully cooked, remove the foil and use the grill setting to achieve a golden surface.
After baking, do not cut the chicken immediately. Let it rest for about 15 minutes at room temperature so it holds its shape better and remains juicy and tender.
