Chocolate cream can also be used as a spread on different types of bread. If the cream is prepared with vegetable oil, it can be piped with a piping bag, but it will lose its shape after a while. However, if melted butter is used, it retains its shape and can be used for cake decoration.

Ingredients for Thick Cocoa Cream

  • 1 egg yolk

  • 2 tablespoons wheat or corn starch

  • 1 tablespoon all-purpose flour

  • 5 tablespoons powdered sugar

  • 1 cup milk

  • 2–3 tablespoons cocoa powder

  • 50 grams butter

  • 1/2 teaspoon vanilla

Instructions for Making Thick Cocoa Cream

Mix the egg yolk thoroughly with cocoa powder and powdered sugar. After combining, stir well. Dissolve the starch and flour in a small amount of milk to prevent lumps. Add the remaining milk, place the mixture over low heat, and stir continuously with a hand whisk until it begins to thicken.

When it starts to thicken, whisk more quickly. Once the milk and starch mixture becomes slightly thick, remove it from the heat and mix it with the egg mixture, stirring very quickly to prevent the egg from curdling.

Return the mixture to the heat, then add the butter and vanilla. Stir until it reaches the desired thickness and becomes smooth and uniform. After cooking, pour it into a container and cover the surface with plastic wrap to prevent a skin from forming.
