SAEDNEWS: Pasta is one of Italy’s most famous foods and comes in many different varieties. There are hundreds of shapes of pasta, including farfalle, penne, spaghetti, macaroni, fettuccine, rotini, bucatini, rigatoni, and many more. Penne pasta with Alfredo sauce is one of the most popular ways to prepare this dish.

“Pasta” is an Italian word used for this extremely delicious dish, which can be prepared in many different variations and cooking methods. It is safe to say that all of them have their own unique and excellent flavors.
Approximate cooking time: 1 to 1.5 hours
Serves: 4 people
Pasta: 300 g
Small mushrooms: 200 g
Chicken breast: 1 piece
Oil and butter: as needed
Milk: 1/2 cup
Chicken stock: 1 cup
Garlic: 1 large clove + 1 small clove
Cream: 1.5 cups
Parmesan cheese: 1 cup
Salt, black pepper, paprika, turmeric: as needed
Fresh parsley: 1/4 cup

First, cut the chicken breast into small pieces about the size of two finger joints. Place it in a bowl and add spices (salt, pepper, turmeric) and one large chopped garlic clove. Mix well with your hands so the seasoning covers all parts of the chicken. Let it rest for a few minutes.
Then sauté it in a little oil until it is cooked and turns white, but still remains juicy.
Tip: For better flavor and color, you can add a little paprika while cooking the chicken.
Wash the mushrooms and slice them. Sauté them in a pan with a small amount of salt and butter.
Tip: To prevent mushrooms from releasing too much water and shrinking, use high heat at first, but be careful not to burn them.
Add the cooked chicken to the mushrooms and sauté for 2–3 minutes over low heat with a little chicken stock. Then turn off the heat and prepare the Alfredo sauce.
Note: If chicken stock is not available, you can use water with natural chicken broth seasoning. Be careful, as it is usually salty—adjust salt accordingly.
Melt butter in a pot. Add the small garlic clove and sauté for 1 minute until golden.
Important: Do not burn the garlic, as it will ruin the taste and appearance of the sauce.
Mix cream with 2–3 tablespoons of milk and add it to the garlic and butter mixture.
Stir continuously for 3–5 minutes until it becomes creamy. Then add chopped parsley, Parmesan cheese, salt, and pepper. Continue stirring over low heat until the sauce thickens and sticks lightly to a spoon.
Note: Using pizza cheese instead of Parmesan is not recommended as it affects the texture.

Boil water in a pot. Add salt and a little oil, then cook the pasta according to package instructions (usually 5–10 minutes). Drain it afterward.
In a large pot, combine pasta, chicken with mushrooms, and Alfredo sauce.
Optionally, add about 1/3 cup of milk and stir to help the sauce absorb into the pasta for better flavor.
Mix everything well so the sauce spreads evenly. Cover and let it cook on low heat for 20–25 minutes.
Stir occasionally to prevent sticking or burning.
Once ready, transfer the pasta to a serving dish. Garnish with small pieces of chicken and chopped parsley.
