Ingredients for Apricot Jam:
Apricots: 1 kg
Sugar: 600 g
Citric acid: ¼ teaspoon (or 1 tablespoon fresh lemon juice as a substitute)
Brewed saffron: 2 tablespoons
Optional: ½ teaspoon vanilla (added at the end of cooking)
Notes:
There is no need to add water in this recipe. It is better to prepare the jam in small batches, as larger quantities take longer to reach the desired consistency and may lose shape or become mushy. If the heat is too low, the jam may become overly soft; if too high, it may crystallize. Therefore, a medium to slightly high heat is recommended. During cooking, avoid excessive stirring to prevent the fruit from breaking down.
