How to Make Lemon Jam: One-Time Recipe That Lasts

Preparation and Cooking Steps

  1. Prepare the lemons
    Wash the lemons thoroughly. Cut off the stem end and prick the lemons in several places with a needle.

  2. Boil to remove bitterness
    Place the lemons in a pot with some water and boil for 5 minutes. Discard the water and repeat boiling for 5 minutes. Repeat this process 6–7 times until the bitterness of the lemon peel is removed.

  3. Cook until tender
    After removing the bitterness, cook the lemons until they are soft enough to be pressed gently between two fingers. Soak the cooked lemons in cold water for 3 hours.

  4. Prepare the syrup
    Place the sugar and water on the stove, stirring 2–3 times until the sugar dissolves. Add the lemons to the syrup and reduce the heat.

  5. Add lemon juice and thicken
    Add 1 tablespoon of fresh lemon juice to the syrup and let it simmer until the jam thickens (keep the sides of the pot wet to prevent sticking).

  6. Cool and store
    Remove from heat and let the jam cool. Transfer to a lidded container and store in the refrigerator or freezer.

Special Tips

  • If the lemons are not cooked properly, the peel will remain tough after adding to the syrup, causing the lemons to shrink.

Bowl-Style Lemon Jam

  • Cut the lemons in half and remove seeds and pulp.

  • Boil the peel to remove bitterness as with whole lemons.

  • Fill the hollowed lemon halves with barberry or sour cherry jam when serving.
