Zucchini: 2
Onion: 1
Button mushrooms: 250 g
Bell pepper: 1
Olive oil or vegetable oil: 2 tbsp
Garlic: 3 cloves
Red chili powder: 1/4 tsp
Coriander powder: 1 tsp
Ground cumin: 1/4 tsp
Lemon juice: 2 tbsp
Chopped parsley and cilantro: 2 tbsp each
White vinegar and salt: as needed
To make the marinade sauce, first add olive oil, cumin powder, coriander powder, lemon juice, garlic, and red chili powder into a blender. Add salt and a few tablespoons of vinegar, then blend until smooth. Finally, add chopped parsley and cilantro and pulse lightly so they remain slightly chunky (they should not be fully blended).
