If you want to try making this delightful cookie at home with an easy method, follow this step-by-step guide.

Ingredients for Pistachio Queen Cookies

  • All-purpose flour: 1 cup

  • Powdered sugar: ½ cup

  • Soft butter: 100 grams

  • Egg: 1

  • Vanilla extract: a pinch

  • Chopped pistachios: 1 cup

  • Honey: 1 tablespoon

  • Breakfast cream (or heavy cream): 1 tablespoon

Instructions

Step 1: Start by placing the softened butter and powdered sugar in a bowl. Beat them with a medium-speed electric mixer until creamy. Add the egg and vanilla, and beat for another 30 seconds until smooth.

Step 2: Gradually add the flour and fold it in with a spatula until a soft dough forms. Place the dough in a freezer bag and let it rest in the refrigerator for 20 minutes.

Step 3: Remove the dough from the fridge and place it between two layers of freezer bags on a work surface. Roll it out to a thickness of 2–3 cm. Use a cookie cutter with a hollow center to shape the dough, then arrange the cookies on a baking tray. Preheat the oven to 180°C (356°F) and bake the cookies for 10 minutes until partially cooked.

Mix the honey and cream, then stir in the chopped pistachios. Remove the tray from the oven and fill the cookie centers with the pistachio mixture. Return the tray to the oven for another 10–15 minutes until the cookies are fully baked and golden. Allow them to cool completely before serving.

Important Tips

  • You can substitute sugar for honey if preferred.

  • Flour quality varies across brands, which can affect the required amount. Add gradually, and stop if the dough starts to firm up before using all the flour. If the dough seems too soft, add a little more flour.

  • Powdered sugar must be finely ground sugar. If using regular sugar, it will not achieve the same smooth texture. Before using, crush any clumps and sift the powdered sugar for best results.
