SAEDNEWS: Cilantro Rice: A Simple Homemade Dish with Saffron Chicken

Ingredients for Coriander Rice with Chicken

Chicken | 900 g |
Fresh coriander | 1 cup |
Onion | 1 |
Saffron (brewed) | 3 tbsp |
Cinnamon | ½ tsp |
Turmeric | ½ tsp |
Tomato paste | 1 tsp |
Salt & pepper | To taste |
Instructions
Step 1:
Wash the rice and soak it in water with some salt for about 3 hours. Then, cook it using the “draining method” as explained in standard rice recipes.
Step 2:
Add the cleaned, washed, and chopped coriander to the drained rice.
Step 3:
Pour some oil into the bottom of a pot and heat it. Place slices of potato or bread at the bottom to lightly fry. Then add the rice mixed with coriander, drizzle a little oil on top, and cover to steam.
Step 4:
Peel and finely chop the onion. Heat some oil in a pan and sauté the onions until golden.

Step 5:
Cut the chicken breast into medium cubes and sauté with the onions until the color changes.
Step 6:
Add the spices and tomato paste to the chicken and reduce the heat, allowing the flavors to blend.
Step 7:
Add the brewed saffron along with a cup of hot water to the chicken and simmer on very low heat until cooked. Once the rice is steamed, serve the chicken alongside the coriander rice.
