Ingredients for Chicken Breast Tahchin with Corn and Peas
1 medium chicken
4 cups rice
½ cup green peas
½ cup corn
1 potato, diced
1 onion
½ cup mushrooms
Thyme, to taste
Saffron, to taste
Pistachio slivers, for garnish
Salt and pepper, to taste
Almond slivers, for garnish
Instructions
Soak the rice in salted water, then cook it in boiling water until slightly soft. Drain and set aside.
In a pan, sauté the chopped onion, then add the chicken fillets and lightly fry. Let the chicken cook in its own juices.
Add the diced potato and sauté for a few minutes, then add the corn and peas. Add the mushrooms (slightly blanched in water) and continue frying. Season with salt, pepper, and thyme.
Preheat the oven. Grease the baking dish lightly. Mix a small portion of the cooked rice with brewed saffron and press it into the bottom of the dish.
Layer the prepared chicken and vegetable mixture, then add another layer of plain rice, repeating until all ingredients are used.
Cover the dish with aluminum foil, poke a few holes, and bake for 15–20 minutes.
