SAEDNEWS: How to Make ‘Sholeh Zard’ in the Oven
According to SAEDNEWS, Shole Zard is one of the traditional and ancient Iranian desserts, often served as a starter. Like Gheimeh and Adas Polo, it is also prepared in large quantities as a devotional dish during special religious occasions. Below, we will guide you through how to prepare Shole Zard in the oven.

Rice: 1 kg
Sugar: 2 kg
Butter: 150 g
Ground saffron: 1.5 mesghal (6 g)
Rosewater: 1 cup
Slivered almonds: 150 g
Slivered pistachios for garnish: 50 g
Step 1:
For best results, wash the rice and soak it for a few hours before cooking.
Step 2:
Place the rice in a suitable pot and add six times its volume of water. Put it on the stove and bring it to a boil. Once boiling, reduce the heat and allow the rice to cook until fully soft.
Step 3:
After the rice is cooked, add the sugar and stir well to prevent it from sticking. If the mixture seems too thick, you can add a little water.
Step 4:
Once the Shole Zard has thickened, add the brewed saffron and rosewater, stirring thoroughly so the color is evenly distributed.
Step 5:
Melt the butter in a separate container, then add it along with some slivered almonds to the Shole Zard and mix well.

Final Step – Oven Cooking:
Cover the pot and place it in the lower rack of the oven. Bake at a gentle heat for 30 minutes until the dessert sets.
If you prefer not to use the oven, you can continue cooking Shole Zard on low heat on the stove for another 30 minutes until set. Stir regularly to prevent sticking.
Once the Shole Zard has set, serve it in individual dishes and garnish with ground cinnamon, slivered almonds, and pistachios. Refrigerate before serving to cool.
Use high-quality rice for the best texture and taste.
Soak the slivered almonds in water for two hours before using.
Grind saffron only when needed to preserve its aroma and color. Avoid using an electric grinder.
