You can make this dish in any size you like and serve it with a variety of sauces. Below is a step-by-step guide to preparing mantu.

Step 1: Preparing the Dough

To make mantu, you first need to prepare the dough.

  1. In a bowl, whisk the egg.

  2. Add a little water to the egg and whisk again.

  6. If the dough is dry or flour remains on the surface, add a bit more water and continue kneading.

  7. Cover the dough with plastic wrap and let it rest for 30 minutes.

  8. Cover the bowl with a cloth.


Step 2: Preparing the Filling

Next, prepare the mantu filling.

  7. Add chopped coriander and stir.


Step 3: Preparing the Sauce

Now prepare the mantu sauce.

  1. Cook the lentils.

  2. In a pan, sauté grated garlic, then add lentils, salt, ground coriander, and turmeric.

  3. Add tomato paste and cook until the mixture thickens.

  4. In a separate bowl, mix yogurt, salt, and grated garlic.


Step 4: Shaping the Dumplings

Folding the dough around the filling requires precision.

Instructions

  1. Take the rested dough out and place it on a work surface.

  2. Divide the dough into two portions.

  3. Roll out one portion thinly.

  4. Cut the dough into small circles.

  5. Place the meat mixture in the center of each circle.

  6. Seal the edges.

  7. Lightly coat the dumplings with oil.

  8. Steam or boil them carefully, ensuring the dumplings do not open.


Step 5: Serving Mantu

  1. You can serve the sauce separately or pour it over the dumplings.

  2. Spread the yogurt and garlic mixture on a serving dish.

  3. Place the mantu on top.

  4. Pour the lentil sauce over the dumplings.

  5. Garnish with fresh coriander.
