This delicious Turkish stew is made with meat and white beans and appeals to the taste of many Iranians. You can also make slight variations when preparing it. How to Make Fasuliye: White Bean Stew with Meat

Step 1:
Cut the meat into small cubes, rinse it once, and let it drain.

Step 2:
Soak the white beans the night before or at least a few hours in advance, changing the water once. Once the beans’ gas is released, place them in a pot with water covering them by one finger above the beans and cook until tender.

Step 3:
Sauté the meat in a pot with a little oil until browned.

Step 4:
Peel and wash the onion, finely dice it, and add it to the meat. Sauté until fragrant.

Step 5:
Place the dried limes in a bowl of water to remove bitterness.

Step 6:
Peel and finely chop the tomatoes, then add them along with the tomato paste to the meat and sauté together.

Step 7:
Add the spices (salt, black pepper, thyme, and turmeric) to the meat and sauté briefly. Then pour enough water to cover the ingredients and let them cook.

Step 8:
Pierce the dried limes and add them to the stew. Reduce the heat and let it simmer gently.

Step 9:
During the last 40 minutes of cooking, add the beans along with two red peppers, washed and finely chopped.

Step 10:
Finally, add the brewed saffron and let the stew simmer until fully cooked. Garnish with fresh parsley and enjoy your Turkish Fasuliye.
