According to Saednews, quoting Bitoteh, the menu at the restaurant “Laurent Viet” is not for the faint-hearted, but it may represent the future of feeding the world’s growing population with this style of cuisine.

The restaurant’s unusual menu includes shrimp salad with mealworm larvae, crispy insects served over vegetables, and chocolate-covered grasshoppers. The delicate presentation of the dishes has impressed adventurous customers dining on the sun-filled terrace in Paris.

A French chef, while preparing a pasta dish made from mealworms, sweet potatoes, and fried insect cocoons, said: “This is an excellent dish for those trying these species for the first time, because they have very interesting flavors.” He added that only a small number of people might dislike these foods.

In January, the European Food Safety Authority declared mealworms safe for human consumption, and in May it approved their sale in the market. The authority has also approved more than 12 food products made from insects, including beetles and grasshoppers. Mealworms and insects in general could become a sustainable food source in the future due to their low carbon footprint.

Stefan de Keersmaecker, a spokesperson for health and food safety at the European Commission, said: “Insects are nutritious and can really help us move toward a healthy and sustainable diet.”

However, the restaurant faces a dual challenge: promoting its dishes to the public while also learning how to turn insects into truly tasty foods.

The restaurant states that it must find the right flavors and the right ingredients, adding: “Everything is amazing. Any chef would tell you the same.”
