According to the Cooking Service of Saed News, Window Bread Pastry, known as Nan Panjereh-i in Persian, is one of the traditional and popular Iranian pastries. This delicious pastry is usually made during religious and historical Iranian festivals and served to guests. The method of making Window Bread Pastry is very simple, and every housewife can easily prepare this tasty pastry at home. Flour: 1 cup
Milk: 1 cup
Starch: ½ cup
Eggs: 3
Vanilla: ½ teaspoon
Powdered sugar: ½ cup
Rosewater: 2 tablespoons
Window Bread Pastry mold
Step 1:
To prepare the pastry, first mix the starch, milk, and rosewater in a suitable bowl until fully combined. Then add the eggs one by one and mix well until smooth.
Step 2:
Add the vanilla to remove any unpleasant egg smell. Gradually add the flour and stir with a spoon until the batter forms. To make the batter smooth, strain it to remove any lumps.
Step 3:
It’s best to sift the flour two to three times before adding it to the other ingredients. This helps mix the flour easily and prevents lumps. After the batter is ready, place a suitable pan on the stove.
Step 4:
Pour enough oil into the pan so the pastries can float while frying. Heat the special Window Bread Pastry mold in the hot oil for 10 seconds, then dip it into the batter up to the edge of the mold.
Step 5:
Put the mold back into the oil and gently shake it until the pastry separates from the mold. Continue frying the pastries in the same way. After frying, place the pastries on paper towels to absorb excess oil.
Step 6:
Because the starch in the batter settles at the bottom, stir the batter every few minutes while frying. After the pastries have cooled slightly, roll them in powdered sugar and arrange them on a serving dish.
Window Bread Pastry with Yogurt:
You can also make this delicious pastry with yogurt. Using yogurt makes the pastry softer. If you prefer a crispier, more brittle texture, definitely use milk.
Window Bread Pastry without a Mold:
If you want to make this pastry without the mold, it can’t be called Window Bread Pastry because the batter is very runny and requires a mold. However, if you don’t have a mold, you can use a piping bag (like for Zoolbia) to pour the batter into the oil for frying.
