Prepare the mixture to season the fish. To do this, mix flour, classic wheat malt powder, egg white, olive oil, and some salt and pepper until you get a thin batter.
Use a glass bowl; pour one egg white into it and whisk well until it becomes white and foamy. Add some salt and pepper, then add 2 tablespoons of olive oil and 1 cup of wheat malt powder and continue mixing all ingredients together. Finally, gradually add 60 grams of sifted white flour to this mixture until you get a thin batter.
For frying the fish: keep the thin batter ready in front of you. Sift the remaining 60 grams of white flour onto a plate and keep it ready.
First, roll each fish fillet in the 60 grams of white flour, then dip it into the thin batter. As soon as you remove the fillet from the batter, immediately place it in a hot frying pan with oil to fry until golden and fully cooked. Repeat for all 4 fish fillets.
