Make Haft Bijar Pickle in Just 10 Minutes with This Simple Trick / How to Make Bazaar-Style Mixed Haft Bijar Pickle

Ingredients for Haft Bijar Pickle

  • Cauliflower: 2 kg

  • Garlic: 5 bulbs

  • Quince: 2

  • Jerusalem artichoke (Chinese artichoke): 2

  • Eggplant: 1 kg

  • Cucumber: 1 kg

  • Green beans: 1 kg

  • Carrots: 1 kg

  • Hot green chili peppers: 250 g

  • White vinegar: as needed

  • Salt: as needed

  • Pickling spices: as needed

  • Tarragon, savory, mint, coriander, and parsley: as desired


How to Make Haft Bijar Pickle

To prepare this delicious and festive pickle, start by chopping the cauliflower and washing it thoroughly in salted water.

Wash the cucumber, Jerusalem artichoke, eggplant, and carrots well, then dice them into cubes. For better visual appeal, try to cut all vegetables into equal-sized pieces.

Wash and slice the green beans into rings. Wash the two fresh quinces well and dice them without peeling.

Wash and peel the garlic cloves, then set them aside.

Clean and wash the herbs listed for this pickle. After they are completely dry, finely chop them. Make sure the herbs are thoroughly dry, or your pickle might mold.

If you prefer a softer mixed pickle, boil each vegetable separately in a little water for 5 minutes. This step is optional and depends on your taste. If you do boil them, be sure to drain and dry the vegetables completely to prevent mold.

Now it’s time to mix all the prepared ingredients together. Add the desired amount of salt and pickling spices and combine well.

In a clean, dry pickling container, layer the mixed vegetables. After each layer, add a little dried herb mix, a few garlic cloves, and a few green chilies. Continue this process until all ingredients are used up.

Top the final layer with more garlic cloves, some dried herbs, and green chilies.

The pickling spices give a unique and delicious flavor, but be careful not to overdo it.

Once the container is filled, pour white vinegar on top. If you prefer a very tangy and spicy pickle, use only white vinegar. Add enough to completely cover all the ingredients. If you want a milder pickle, mix equal parts white vinegar and cooled, boiled water, and pour it over the vegetables.

Seal the container tightly and store it in a cool, dark place until the Haft Bijar mixed pickle is fully ready.
