Ingredients for Smoky Paprika Chicken with Rice

  • 8 chicken drumsticks

  • 2 tablespoons butter

  • 1 onion

  • 1 red bell pepper

  • 160 g roasted red bell pepper

  • 1–2 tablespoons tomato paste (14 g)

  • 1 teaspoon salt

  • 1 teaspoon paprika powder

  • 1½ cups Basmati rice (293 g)

  • 2½ cups chicken broth (590 ml)

  • 2 tablespoons parsley

How to Prepare Smoky Paprika Chicken with Rice

1. Roast the peppers:
Preheat your oven to 425°F (220°C). Cut a large red bell pepper into quarters. Place the peppers on a small baking tray, brush with olive oil, sprinkle with a pinch of salt and pepper, and roast for 20–25 minutes until charred. Alternatively, you can roast peppers directly over a gas flame, turning every few minutes until soft and evenly charred. Remove the seeds and set aside.

2. Brown the chicken:
Pat the chicken pieces dry with a paper towel if necessary. Season with salt and pepper.
