Sesame-crusted fish is quite similar to breaded fried fish and can be prepared using various fish fillets, either deep-fried, pan-fried, oven-baked, or air-fried.
Wash the fish fillets thoroughly and drain excess water. If the fillets contain bones or skin, remove them. If using frozen fish, let it thaw completely. Also, wash a lemon and extract its juice.
Place the fish fillets in a suitable dish. Add lemon juice, vinegar, salt, black pepper, onion powder, garlic powder, paprika, and a few tablespoons of brewed saffron.
Massage the fillets to evenly coat them with the marinade. Cover the dish with plastic wrap and refrigerate for an hour to absorb the flavors.
In a shallow dish, combine wheat flour, corn flour, cornstarch, and breadcrumbs. Add sesame seeds and mix well until fully combined.
If using spiced breadcrumbs, additional seasoning is unnecessary. Otherwise, add a small amount of garlic powder, onion powder, black pepper, and paprika. Be cautious with the seasoning since the fish is already marinated.
Crack the eggs into a bowl and whisk them until the yolks and whites are fully combined.

Remove the fried fillets and place them on a paper towel to absorb excess oil. Since the coating absorbs a significant amount of oil, this step is essential.
