Ingredients for Making Minced Meat Roll:

  • 400 grams minced meat

  • 1 large onion and 1 medium onion

  • 50 grams barberries

  • 10 walnuts

  • 1 egg

  • 1 green bell pepper

  • Half a cup of breadcrumbs

  • 1 cup chopped parsley

  • 3 tablespoons tomato paste

  • 1 teaspoon turmeric

  • Salt, red pepper, and black pepper to taste

  • Oil as needed

  • Sliced pistachios and almonds as needed

How to Make Minced Meat Roll:

  1. First, prepare the filling for the meat roll, then the meat mixture, roll it, and finally cook it.

  2. To prepare the filling, chop and fry the medium onion in a pan, adding some salt, pepper, and turmeric. Then add the chopped walnuts and barberries. (You can also add raisins if desired.) Sauté the filling ingredients briefly and then remove from heat.

  3. Peel and grate the large onion. Place the grated onion in a bowl and add the minced meat. Add some salt and, if desired, red pepper or black pepper. Add turmeric, breadcrumbs, parsley, and the egg, and mix well. Once you have a uniform mixture, cover the bowl with plastic wrap and place it in the refrigerator for 45 minutes.

  4. After 45 minutes, take the meat mixture out of the fridge and spread a freezer bag on your work surface. Knead the meat mixture briefly in your hands and then spread it gently on the freezer bag. The thickness of the spread meat should be about 1 cm.

  5. Place the filling on the meat. Starting from the side closest to you, roll the meat into a cylindrical shape using the plastic. Roll it back and forth several times to shape it into a cylinder, and then gently remove the plastic.

  6. Heat oil in a pan until hot. Gently place the meat roll in the oil. Initially, the heat should be high to sear the meat, then reduce the heat to cook it slowly. Once one side is fried, turn the roll to fry all sides evenly.

  7. To prepare the sauce, sauté tomato paste with some salt, turmeric, and red pepper in a pan, and finally add half a cup of boiling water. Stir and set the sauce aside.

  8. After frying the meat roll, place another pan on the stove, covering the bottom with sliced bell peppers. Add half of the tomato sauce. Place the meat roll on the bell peppers and pour the remaining sauce over it.

  9. Cover the pan and let the meat roll cook for 30 minutes, occasionally turning it to ensure it cooks thoroughly and absorbs the sauce's flavor. Remove the meat roll from the stove, let it cool slightly, and carefully transfer it to a suitable serving dish.

  • You can use chickpea flour instead of crushed baguette crumbs.

  • You can add two or three boiled eggs to the filling. Place the boiled eggs on the meat with other ingredients before rolling it.
