  • Meat: Stew beef or lamb

  • Beans: Black-eyed peas or pinto beans

  • Fried onions: As needed

  • Tomato paste: To taste

  • Spices: Salt, turmeric, pepper (to taste)

  • Verjuice: For a tangy flavor

  • Herbs: Chives, parsley, cilantro, spinach, and kerwiz (a local herb from Azerbaijan)

Preparation Method:

  1. Sauté the Meat:
    Fry the meat with fried onions until it changes color. Add water and a cinnamon stick, then allow the meat to cook thoroughly.

  2. Sauté the Herbs:
    Chop the herbs slightly larger than you would for Ghormeh Sabzi (a Persian herb stew) and sauté them on low heat for about 5 minutes.

  3. Combine Herbs and Meat:
    Add the sautéed herbs and cooked beans to the meat. Let the herbs settle into the stew.

  4. Add Spices and Flavorings:
