SAEDNEWS: Potato cake is a delectable international dish made with a variety of ingredients. The filling can include various meats and vegetables, tailored to individual tastes.
When you think of cake, birthday cakes or chocolate and cream cakes probably come to mind. While these are the common types of cakes, you might be intrigued to know that you can also make cakes with potatoes in various ways. The original potato cake hails from Turkey, prepared in different shapes and recipes. Due to its cake-like appearance and the fact that it is often baked in the oven, it has become known as potato cake.
700 grams flour
2 eggs
2 tablespoons yogurt
2 tablespoons cream
250 ml milk
100 grams melted butter
1 teaspoon salt
40 grams sugar
1 teaspoon baking powder
1 kg boiled potatoes
1/2 cup chopped parsley
1/3 cup chopped green onions
2 tablespoons each of labneh cheese, butter, and mild mustard
1 teaspoon each of curry powder, salt, pepper, thyme, and garlic powder
Step 1: To make the fancy potato cake, first, cut the potatoes into large cubes. Fill a pot halfway with water and bring it to a boil over high heat.
Step 2: Add some salt to the boiling water, then add the chopped potatoes. Cook the potatoes for 5 minutes, then drain and rinse with cold water.
Step 3: Dry the potatoes with a towel and set them aside. In a bowl, mix together the olive oil, strained yogurt, baking powder, white flour, chopped parsley, and some salt and black pepper to make the dough. Let it rest for 30 minutes to 1 hour.
Step 4: Combine the ingredients well until smooth, then add the potatoes and mix with the other ingredients. Grease a Pyrex dish with cooking oil and dust it with some flour.
Step 5: Pour the cake mixture into the Pyrex dish and smooth the surface with the back of a spoon. Cover the top completely with shredded mozzarella cheese and sprinkle some sesame seeds for decoration.
Step 6: Place the dish in an oven preheated to 175°C for 30 to 45 minutes until the potatoes are fully cooked. Finally, turn on the grill to make the top golden.
Another way to make this delightful cake is with potatoes and vegetables. The preparation is similar, but in this method, you can use various vegetables. For this, you need 7 boiled potatoes, 1 cup shredded chicken, 1/2 cup boiled peas, 1/2 cup boiled carrots, 4 pickles, 4 tablespoons white sauce, 50 grams butter, and salt, pepper, and lemon juice to taste. First, mash the boiled potatoes with salt and pepper and add the butter. Grease a mold and spread the potato mixture to cover the bottom and sides. Add the shredded chicken, pickles, peas, carrots, mayonnaise, and lemon juice. Press the mixture slightly and cover with the remaining mashed potatoes. Bake in the oven for 15 minutes. Let the cake cool, then remove from the mold and decorate as desired. This cake is served cold.
If you don't have an oven, you can still make a delicious potato cake. For this method, you need 700 grams of potatoes, 2 eggs, 3 tablespoons chopped tomatoes, 3 tablespoons chopped green onions, 1 chopped green pepper, 3 tablespoons milk, some flour, 40 grams breadcrumbs, salt, pepper, and oil. Peel and chop the potatoes, then cook them in a pot of salted water for 20-30 minutes. Mash the potatoes with milk and one beaten egg, then add the green onions, tomatoes, salt, pepper, and chopped green pepper. Mix well, form small patties, and coat them in flour, then beaten egg, and finally breadcrumbs. Heat oil in a pan and fry the patties until golden brown. Enjoy your potato cake without an oven.
